Winter is coming…however, let’s enjoy fall first! It’s time to cozy up with some delicious food. We are excited to partner with The Open Seat to share two affordable, tasty, and festive recipes!

What is the Open Seat Food Pantry?

The Open Seat is the UW-Madison campus food pantry that provides healthy and nutritious food and personal care items ranging from a pear to a toothbrush. Available to all students, The Open Seat allows anyone to make a banger meal, which is exactly what students need after a long day of classes. 

More Bargains with The No Fees Project

Looking to improve your chef game on a budget? Many of Rec Well’s programs and services are included at no additional cost through tuition and fees, but some offerings do have additional costs. No student should sit on the sidelines and watch others play. Our partnership with the campus The No Fees Project allows in-need students to participate in all of our Nutrition Education classes for no additional cost. If you qualify for The No Fees Project, you already have these fees waived in your membership. All you have to do is register and show up!

Recipe 1: Creamy Autumn Pasta

Ever wanted a pasta dish that included warm, fall flavors while representing those multicolor fallen leaves? This 15-minute recipe is perfect for you! Check out a quick video of how to make this pasta

Ingredients

  • 1 lb cavatappi or penne pasta
  • ¼ white onion
  • 15 oz can pumpkin puree
  • 1 tbsp butter
  • ½ cup whole milk
  • 1/8 tbsp ground nutmeg
  • ¼ tbsp paprika
  • 1/8 tbsp crushed red pepper
  • 1 teaspoon garlic powder
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook 1 lb pasta in a large pot of heavily salted water until al dente. Reserve 1 ½ cups pasta water and drain.
  2. Heat olive oil in a large skillet over medium heat.
  3. Dice onion and add to the skillet with salt. Sauté for 7-8 minutes and at the last minute, add the nutmeg, paprika, crushed red pepper, and garlic powder.
  4. Add the whole can of pumpkin puree and pasta water to the pan and whisk to combine the sauce.
  5. Add the butter and whole milk. Whisk to combine. Add remaining pasta water if needed.
  6. Drain cooked pasta and add to the sauce. Season with salt and pepper to taste.

Recipe 2: Egg Fried Rice

Fried rice is made by college students everywhere because it’s simple yet delicious! Packed with flavor and texture, this dish is easily customizable to your pallet or needs! Check out a quick video of how to make this dish

Ingredients:

  • 4 cups cold rice
  • 4 tbsp soy sauce
  • 4 eggs
  • 3 tbsp vegetable oil or canola oil
  • ½ onion diced
  • 1 carrot, diced

Instructions:

  1. Cook 4 cups of rice to package instructions the night before. Cool to room temp and let sit in the fridge overnight.
  2. Peel and dice carrots and onion into small pieces.
  3. Heat a skillet over high heat; add 1 tbsp cooking oil and swirl to coat. Add carrot and onion to skillet and cook for 4-5 minutes, stirring occasionally.
  4. Beat 4 eggs in a small bowl with a fork. Pour beaten eggs into the skillet and scramble.
  5. When eggs are cooked ¾ of the way (1-2 minutes), add remaining 2 tbsp vegetable oil and cold rice. Breakdown the rice with a spatula and mix in with the eggs
  6. Add soy sauce around the edge of the skillet, so it will burn slightly for smoky flavor. Add salt and pepper to taste and mix well.
  7. Turn off the heat and if you have green onions, slice them and add them on top. Garnish with sesame seeds if available
