Veronica joined Recreation & Wellbeing (Rec Well) in late 2022. She is excited to support the new comprehensive nutrition education program and collaborate with partners across campus to create a culture of health. These efforts include managing the Wolf Teaching Kitchen where hands on experiences and interactive learning occur. She believes nutrition should be fun and accessible to all. In addition to work with Rec Well, she spends one day a week with the team of dietitians at University Health Services (UHS) where they offer medical nutrition therapy to students on campus.

Veronica has a versatile professional background that started as a retail dietitian in a grocery store where she offered many services including group classes, health screenings, and managing the on-site garden. She worked for several years with the SNAP-Education program throughout six counties in northern Illinois. In this role, she focused on evidence-based systems approaches and community collaboration with the goal of achieving nutrition security for communities in need. Veronica’s previous clinical experience includes working as an outpatient dietitian for cardiac rehab and general nutrition for adult populations.

In her free time, she loves to play volleyball, hike, bike, and travel!
